Homemade Chicken Noodle Soup

Hello Everyone!

How is your Friday going so far?  It is rainy and dreary here in North Ga.  So, I thought I would share the perfect comfort food for a day like this.  

I made this back in the Fall but never shared it with you.  It is a recipe from Rachael Ray.  I will share the complete recipe with you at the end of this post.

  I know many of you are getting snow right now.

  Oh and remember when I said I was suffering from allergies?  Well, I found the source!  It was from the firewood that we brought in to put beside the fireplace.  It was from an old tree that fell in our woods.  My husband said that it probably had mold growing on it because it had been a sick tree.  So, I had him remove it and voila!  No more stopped up nose and constant congestion.  And THAT is why we never have a live Christmas tree in our house ( or live clippings).  I'm highly allergic to mold and ragweed!  Just thought I would share that with you in case you are noticing similar symptoms from using real wood in your fireplace. Make sure that the wood is very dry and no fungus or mold is present!  

Ok, back to more pleasant topics, like how to make this delicious soup!

You will need these ingredients:


olive oil, carrots, parsnip, onion, celery, bay leaves, chicken stock, chicken breast tenders, egg noodles, parsley, dill, salt, and pepper

Now, I will tell you that we also added a can of cream of chicken soup (regular size) because it seemed too watery.  We like a more creamy soup.  So, add that to the recipe list if you like more of a cream based soup too.  And another note, the parsnip didn't seem all that necessary.  I probably wouldn't use it again.  So, I say it's optional.


Step 1:  Chop up your vegetables and place in a pot with olive oil.  Add bay leaves, salt and pepper and simmer.



Step 2:  Pour in chicken stock and bring to a boil.



Step 3:  Add cut up chicken and return to a boil.




Step 4:  Cook chicken for a couple of minutes and then add noodles.  Continue to cook soup for about 6 minutes until noodles are tender.  (You could add the can of cream of chicken soup at this point too.)  Remove soup from heat.  

Step 5:  Add parsley and dill, remove bay leaves and serve.


This will be a thick soup.  You can add more water or broth if you like it less thick.

  2. So glad you found the source of your congestion. I bet that was a relief. I love chicken noodle soup, so thanks for sharing the recipe. We're supposed to get pretty cold weather this weekend, so I bought ingredients for chili, but chicken noodle soup sounds so good right now. Love your dishes too!

  6. We have actually been experiencing a real winter here in Phoenix. Lots of rain, morning lows in the 30's and highs around the mid 50's. It's been fun and I've actually put real shoes on this year. Last year I wore sandals all winter. Anyway, this would be a perfect recipe for this year, I may try it this weekend!   8. This looks great - now I'm craving soup!! Oh, and my allergies are definitely affected by the firewood. When I carry in wood? Sniffles for a day. When I clean out ashes? Sniffles and congestion for days!!

  9. Many people are also allergic to pine. Pine is also used for paper pulp so if you are highly allergic to pine, you may also be allergic to the daily newspaper!

  11. It looks yummy. So sorry about the fire wood. It looks cute stacked next to fireplace but not worth it if that is the result. We don't have a live tree either. This was the first year that I thought live clippings might be giving me a stopped up nose. I'll put this on my meal plan. It's finally gotten chilly here is Texas.

  16. We love chicken noodle soup! I make mine very similar and I add cream of chicken soup too. We love those town house crackers with ours. When my son was little he called them golf crackers?? I don't know why but that's what we call them now. I usually use whole wheat egg noodles, they're good in it too. I know you're glad to find the cause of your allergies. Have a great day!
