Fresh from the Garden

Hello everyone!

We have finally begun harvesting vegetables from our garden.  We are still waiting on tomatoes and okra, but most of the others are ready to eat.

Just take a look at all the cucumbers filling up our produce drawer in the refrigerator!



The sad thing though is, I'm the only one here that eats them!  My husband planted 2 plants and they have produced more than any other vegetable we planted.  Looks like we will be sharing these with our neighbors!

The one vegetable I've been waiting for the most is squash.


Finally!  I decided to fry these up to serve with dinner tonight. (Now, if you're my doctor reading this, please forgive me for eating these fried instead of steamed or baked. I know I'm supposed to be reducing my cholesterol.)

I got everything ready.  I forgot to take a picture of it frying.  I got so involved with everything cooking at once.    But here is the final product along with our dinner.


Oh my was it good!  We had pork roast, new red potatoes, squash and bread. I guess the only thing that wasn't on my diet was the fried squash and bread.  Oh, and quite possibly that big blob of butter on the potatoes.  But darn it was good! 

I love eating fresh vegetables in the summer!  Now, if the okra would ever finish growing, I'll give them a try next.

    WOW your garden is really taking off.Didn't you just plant all of those? We would eat all of that and more.We are vegetarians.Just recently decided to do that.My husband had high cholesterol so we changed our way of eating.We both lost weight and both recently had check ups and happy to say all the healthy eating is helping.But.. we do still have pizza,and chocolate and sweets.Just not all the time.Well we do have chocolate every day but not the other stuff.

  3. Yes, we have enjoyed fried squash twice so far. My drawer is full of cukes and squash and beans. We had enough okra last night to fry. OOps there is that fry word again.

  10. I miss my big garden....Your veggies look great.

    Did you know that you can put your sliced or quartered cucumbers in a jaw of left over pickle juice and leave in the frig for a few days to have your own pickles? You just need to eat them in a week or so.

  13. Lucky you! I just got done cutting up vegetables (store bought) for my lunch, but fresh out of the garden would be so much better. Dinner looks delish!

  14. Your garden certainly "took off"...what a great "harvest" you have there!!...I love cucumbers..love them with everything...my mental substitute for chips!....

  15. I have never battered up the squash before~! it looks delicious that way. I ususally just saute with onion and garlic in olive oil. wish I had your crops coming in!!

  16. I can't wait. Our gardens have been in since the beginning of May.
    We have had fresh lettuce for awhile.
    No sign of cucumbers yet. Your squash looks delicious. I fry up my zuccini the same way. Thanks for sharing.

  17. I made fresh pesto last night and some squash sauteed and tossed in would of been wonderful. I'm not sure we have squash planted even, but it will be a while before that is all ready anyhow.

  19. Hi Kelly! Oh, I love fried squash. I grew up in Alabama and my mother fried squash, okra and green tomatoes - and we always had cornbread! :) Your veggies look so wonderful too.
    Oh, when my son was little and I would fry squash, he called them 'little wheels'! :)

  22. Yum, all the veggies look so good & your meal is making me drool -- no, literally! Our garden started producing abundantly a couple of months ago & is almost finished now. The tomatoes and peppers are the only things that seem to tolerate our extreme (110*+) heat. I do have some spaghetti & acorn squashes stashed in a cool dark closet to be enjoyed in the fall.

    Wow, the heat waves are really bad this year. Our predicted high today is 113* -- yikes, I know!
