I'm going bananas over these delicious banana crumb muffins! I had (as usual) a lot of over ripe bananas that I was going to have to throw away. So, instead, I decided to make this recipe. I've made these many times for my family, but have often thought how great they would be as a gift at Christmas for neighbors or friends.
I cannot emphasize enough just how DELICIOUS these muffins are!! As Paula Deen might say, "They're outta this world!"
So follow along and see how they are made. The recipe is at the end.
Preheat oven.
Mix together flour, baking soda, baking powder and salt.
Mash your bananas.
Beat together bananas, sugar, egg and butter.
Stir the banana mixture in with the flour mixture.
Spoon batter into muffin pans.
Mix together brown sugar, flour, cinnamon and butter to make crumb topping.
Sprinkle topping over muffin batter.
Cook in oven.
Remove from muffin pan and cool slightly.
Serve warm for best flavor!
There are pieces of banana goodness ALL in it!
Notice that there are no nuts in this recipe! You could probably add them if you wanted too though. However, I like these just the way they are.

Banana Crumb Muffins
Ingredients:
1 1/2 c all-purpose flour 1 egg, lightly beaten
1 tsp baking soda 1/3 c butter, melted
1 tsp baking powder 1/3 c packed brown sugar
1/2 tsp salt 2 tbsp all-purpose flour
3 bananas, mashed 1/8 tsp ground cinnamon
3/4 c white sugar 1 tbsp butter
1. Preheat oven to 375 degrees. Lightly grease 12 muffin cups, or line with muffin papers.
2. In a large bowl, mix together 1 1/2 c flour, baking soda, baking powder, and salt. In another bowl, beat together bananas, sugar, egg, and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3. In a small bowl, mix together brown sugar, 2 tbsp flour and cinnamon. Cut in 1 tbsp butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4. Bake in preheated oven for 18 - 20 min. until a toothpick inserted into center of a muffin comes out clean.
