Comfort Food on a Cold Night

Hello everyone!

Tonight is a cold one!  I think everyone here and around us are feeling some frigid air right now.  So, what better time than now to make a chicken pot pie for dinner and a Caesar salad.

This is a very easy recipe (my fave) and is very delicious.  This is also a meal that I've taken to a neighbor coming back from the hospital in the past.  You could say it is my "go to" meal!

Here are the ingredients you will need:


(cream of potato soup, canned vegetables, cooked diced chicken, milk, thyme, pepper, deep dish pie crusts, and an egg)

Combine all of the ingredients except the egg.



Mix them well and pour into a pie shell.



Put the other pie crust on top and crimp the edges together with a fork.  



Then brush the top of the crust with an egg.



Bake it in the oven for 40 min at 375 degrees.


It will come out golden brown and yummy inside!

Serve with a side salad.

Chicken Pot Pie

1 can cream of potato soup (std size)
1 can Veg-all (drained)
2 c. cooked diced chicken
1/2 c. milk
1/2 tsp. thyme
1/2 tsp. pepper
2  9" deep dish pie crusts, thawed
1 egg (slightly beaten)

Combine first 6 ingredients.  Spoon into pie crust.  Cover with top crust and crimp edges with fork.  Slit top crust and brush with egg.

Bake 375 degrees  40 min.

Oh........and since it is a cold night and we have a fire going.  A little slice of German chocolate cake will do just fine as well.

  1. this is definitely the perfect dinner on a cold night. We had some freezing temperatures throughout the day...I made an earthy soup for dinner and cheese bread. (by the weekend we'll be back in the high 60's)

    Yum this looks so good. That is a great dinner for a cold evening. We actually had some snow here in Chicago ughh not ready for this yet! I think I may make your recipe it looks so good. Thanks for sharing.

  8. I will pass on the chicken pot pie...reminds me of my childhood when we had to eat it. I will though make up for the lack of nutrients by 2 pieces of cake.

  10. We felt that frigid air Kelly, plus our first snow of the season, the trees were beautiful and the roads were clear. We so enjoyed this first snow...love the recipe of the chicken pot pie!

  12. I love chicken pot pie!! I make mine similar to yours. I use frozen vegetables and cream of mushroom soup with a bit of milk. Nothing like comfort food when it is cold!!

  13. My hubby was just asking me last night if I had a good chicken pot pie recipe...and now I do! Thanks! I love how easy this is. I'm all for recipes that have just a couple of sentences in the directions. :) Oh, and German chocolate cake is one of my favs!

  17. YUM!!! That's a recipe I could make!! Louis Dean makes good chicken pot pies - but he uses every dish in the kitchen and makes a HUGE mess! I like YOUR version better!!

  21. Kelly I made this recipe after the latst time you posted it. The only change I made was to use frozen mixed vegetables (thawed). It was so delicious. This recipe is a keeper.
